I have 2014 mac mini running in Bootcamp. It used to run fine in 2.4Ghz but when I installed new mesh network it would connect to the 5Ghz channel and its so slow sites won't load.

I cant explain it since my smartphone that is in the same room is getting 100mbps+ . Any idea whats going on? Can I disable 5Ghz on the machine?
 
Did you get a good DNS connection? Change the DNS settings to closer time server!most Federal Governments run Time severs for free!

You mean the DNS resolver? like Google 8.8.8.8 ? I used the same DNS on 2.4Ghz and it worked flawless

Can you verify what your link speed is to the network? You can find this information in the "View Your Network Properties" from within Settings on Windows 10.

Just to update you, it seems there is some sort of a driver/software issue because while the 2.4Ghz works better its slower than it should be. I was running sierra which had the expected speed but not on Bootcamp, so I updated to Catalina, removed BootCamp partition, HDD was changed to APFS format, reinstalled Windows 10 from scratched, and now its working again as expected.

Whole processes took like 6 hours between downloading and installing OSes but at least it worked.

Yes,
1-Deleted bootcamp
2-upgraded from Sierra to Catalina
3-create bootcamp partition+install Windows

My only guess it had to do with drivers of some sort because on the Sierra side before upgrading the speeds were perfectly fine.

Before you had removed the Boot Camp partition, did you attempt to update the Boot Camp drivers and software using Apple Software Update within Windows?

I believe yes, i also updated Win10
