Heaven or Hell
I am running Leopard 10.5.6 on a Mac Pro 3 Ghz. with 6 GB of RAM
and it seems really sluggish.

I have installed tons of applications but still have 85 GB of space left on the boot drive. It's a 320 GB -7200 RPM drive.

But just for fun i created a new User Account and : VOILA !
It was 300 times faster with everything !!

Where is the culprit in my Admin User Account ??

What does the activity monitor say when you're in your admin account?

Ok, now go into your other account where everything is supposedly working and do the same thing.

Note that based on what you posted, iTunes is taking an INSANE amount of CPU! Are you converting files or something? My iTunes is taking just 4.2% of my 2.16 C2D listening to music.
 
Bad plugins may be a cause of sluggishness too: I've been using wmv/wma-plugins for Quicktime, and they used to make Safari crash. Flash (games, video) tends to speed up my fans to 6200 rpm too... (on a Core Duo MacBook, not on the iMacs)
