So, I'm watching the new key note and I discover what my most hated feature of my watch is called: "Smart Stack". I have a watch face all set up so I can do everything I want with one touch but as soon as I start listening to music (on my iPhone -- not my watch), that watch face disappears and I have something that I have no idea (until just now) where it came from, what it's called, how to configure it, how to disable it, etc.

And, of course, from my web searches, it appears that I can not disable it. I completely do not understand this logic at all. Why give me all of the configurability and then rip it out of my hands just because I want to listen to music on my iPhone.

I also hate Smart Stack but disabled it. Same with music taking over.

It’s in the Settings in watchOS 11!

I hate & don't use Smart Stack either - and loathe the elimination of the Dock, too.

Heck I wish Time Travel and Glances were still a thing. That seemed to balance convenience and simple plus watching WWDC 2015's Watch launch event in the archives made me wish Time Travel was still a thing. By the time I got my first Watch it was gone (and so were Glances)
