Most of the people I text on a regular basis have iMessage (blue) - but there is that one time that it will send it as a text (green) if it fails. I currently have the Unlimited Text plan with AT&T for $20/mo. I was thinking of removing this and just pay the pay-per-use ($0.20/sms). I know iMessage uses data, but if I remove the text plan will I still be able to received/send texts? Also, is there a chance (probably not) that iMessage counts as SMS to AT&T?

iMessage does not count towards SMS use.

As a fall back try Blackberry BBM which is iOS, Android and of course Blackberry compatible.

Under settings you can turn SMS and MMS off. This will allow you to use iMessage but not incur SMS or MMS use.

Email always work. I think we've forgotten about that but there's nothing wrong with emailing people...or even calling..lol
