Do we have to change to smtp.me.com or can we continue to use smtp..mac.com ? I have both of my /Mac accounts set up as POP anyway so I'm not concerned with PUSH or IMAP. And I don't plan on changing the domain to me.com so can I just leave it as smtp.mac.com ?

You can keep using smtp.mac.com.
