Snapscan 1212u and handling text

I am trying to scan text using an Agfa Snapsan 1212u scanner. I have a Mac G5, we are using OS X and I have omnipage pro x but everything just keeps freezing and I get error messages when ever I try to get the text files. It worked with System 9 but has always been problematical since we changed to OS X. I have read on the Agfa site that they don't recommend saving directly to MS word but they don't seem to say what you should use. I wouldn't mind buying a new scanner but it seems that text files are not handled at all well by new scanners either as they are mainly made for photos. I have many books with pages I would like to scan so a good text scanning programme or advice on how to use Omnipage pro with snapscan would be much appreciated. I'd get a new scanner if I knew it would be simple to scan text. Can anyone please help me?
