I have a brand-new, 15" MacBook Pro that I popped the Snow Leopard disc into, and it's been stuck at 6 mins remaining for HOURS. It was originally supposed to take 45 minutes, then it jumped to 57 minutes and went down with increasing slowness from there. It went from 7 to 6 in about 80 minutes, but now it's just getting ridiculous (been at 6 for well over two hours).
The guy from Apple's support line said pull the plug and see what happens (aka, hold down the power button)
but I'd REALLY rather not take a risk like that. Midway through an operating system install, that seems like one heck of a bonehead move to make... Any ideas other than that?
