I would prefer to not wipe the drive altogether but when I put in the Snow Leopard disk it tells me that it's not possible to install over OS X Server.

I'm installing onto a spare iMac that ran the server software (I have no idea why)...

Anybody have to do this before...and is it possible to do this without completely wiping the drive (clean install)?

Having a similar issue, gonna talk to the store I think no-one seems to be able to help
 
If you have another bootable drive (external hard drive, another Mac in Target Disk Mode, etc), try just booting from that, deleting the System and Library folders manually, then try the install again. It may or may not allow it, but it's worth a shot.
