I realize I have a few options of getting my data back.
I ordered a 250 GB hard drive, up from my current 160 GB.

It comes with an enclosure, so I was wondering if it is possible to:
1) Put the new drive in the enclosure, plug it in, format in Disk Utility.
2) Boot from my Lion USB drive, and choose that drive to install it on. Then, install obviously.
3) Shut down, open up laptop, swap the drives, start up computer..

Would it start right into a fresh Lion desktop? If so, can I then just plug in my Time Machine drive and use Migration Assistant? Will I have to update to 10.7.2 again or does backing up from my Time MAchine backup reinstate both the OS version and my files?

OR, should I choose this route:

1) Immediately install the harddrive, boot from USB drive, format+install. Use migration assistant.

I realize now that the latter is way shorter, but I think I would prefer to use the enclosure, because to me it seems fail safe. I mean, I could boot from it before I install it to make it work so I don't have to open up the laptop again. (Call me lazy)

If you were in my situation, or have been before, what would/did you do?
