I have two iMac's: 2020 27" running Sonoma and a 2011 21" running High Sierra.

I would love to play my old PC games (call of duty, medal of honor, etc).

Is it really as easy as installing XP via bootcamp?

I found a working XP ISO file with serial number.

Will it work equally well on the 2011 or 2020? What would you recommend?

Sure, a Mac with Intel processor is essentially a PC. Your newer iMac should have better specs and be better for gaming.
 
You cannot install Windows XP from someone ISO.
With non working USB and network, how are You going to install drivers?
It is good if the Windows sees CD, and then You can install drivers from it.
But if from that image you make Windows assembly with integrated drivers, then you can install on iMac 2011.
I don't know about the possibility of installation on iMac 2020.

For new iMac, it is not reasonable to make a non standard Bootcamp.
Virtual machine with Windows XP on iMac 2020, will be faster than the Native Windows XP on the Old Mac.
