I'm curious as to why Apple has not put backlighting into it's wired or wireless keyboards?? They've had backlighting in their MBP keyboards for years now. Why not put it into the external keyboards?

Battery life. (On wireless keyboards)
 
Because it's power sucking and it's expensive.

Also you should learn to touch type, just saying ;)
 
I actually don't look at the keys too often but it would be nice to be able to see them when need be.

Aside from aesthetics, I don't see any point on this feature. You can argue about the MBP since it moves a lot, and not all are keen on the Apple keyboard layout.
 
Logitech has a wireless keyboard with a backlight. They even have a version with a Mac keyboard layout. As far as I know, that's the only Bluetooth keyboard with a Mac layout and backlight on the market.
