When I plug it into iTunes it tells me it's in recovery mode and needs to restore which is exactly what I want. When I click restore it either shows a little download bar that says 'Contacting the iPod software update server.' and doesn't ever load anything. Or it will go to a confirmation of the 1.1.1 firmware restore but when I go to download it it will keep stopping at random points saying I timed out so I manually restart it, it eventually gets to the end but then it keeps going. It keeps downloading stuff past the 150mb.

I have no idea what to do, I'm getting really frustrated that I can't simply restore my iPod.
 
delete the old files that you dloaded for the 1.1.1 update(they are somewhere under your Usernames Lib on a mac, they are somewhere else on a windows machine :-D ). Once you ahve done that start the whole process over...
