If I turn on family sharing, any photo I take with my phone can then be seen by anyone in my family? I take pics that I sometimes would not like to share with my wife and kids. How can I prevent against this but also use sharing for things like apps and music?
 
I haven't tried family sharing yet, but it appears that it just sets up a shared "collection" called Family Photos by default which each member can view and add to. I'm pretty sure all photos you take wouldn't be automatically shared. Might want to test it out to be sure though.
