I remember before they redesigned Apple Mail (or even earlier), it can do scheduled email. This was in Catalina I think? Then, they got rid of it.

They don’t support proper printing as well. Every single time, it gets cuts off at the end. Yes, you can use Legal Size, but that doesn’t always work.

Spark by Readdle, despite the apparent privacy issue (I’m not concerned by it, but others are I guess) can do all of that regardless of the email platform.

Why did Apple remove Scheduled Mail? Why can’t Apple figure out the printing situation (not everyone has to print, but for those of us who need to print email)?

I would use Apple Mail, but will default in using Spark for now.

Scheduled mails must have been very short lived then. Because I'm stucked with High Sierra on my iMac and I'm not able to figure out, how to send an email on schedule. Or this feature was even longer before? Though, I can't remember ever seeing it.
