Being new to Mac, what are the absolute software essentials?

--Adobe suite
--MS Office 08
--Parallels

Any other must haves?

Before shelling out of MS Office, try NeoOffice (OpenOffice port) first.

There's a billion apps for the mac that *I* think are essential, but it really comes down to what you do on your Mac. Some that I've found very useful and use nearly every day are:

VLC and Perian
Adium
Disco
Transmit
Final Cut Express
TextMate
Handbrake
