I'm looking for opinions on how you keep track of lists. For example, throughout the year my wife will email me or mention "this would be a good Christmas present." Problem is, this can happen in January! So I am considering how I could go about creating some sort of gift list that would support text, photos, lists, etc. Does that make sense?

If you have a solution for how you manage this, I'd love to hear it.

I'm going to put in a vote for Evernote. If you've got a smartphone, get the app for that, also, Then you can have everything with you at all time. It'll also allow you to take photos of items that your wife might see while out...

It's a great app that works across platforms. I've found it to be even better now that I've got a smartphone to integrate it with.
