This option seems to have disappeared from sight in System Settings > Privacy and Security. Has anyone been able to get it back or shed some light on the change?

Hmm I thought it was still there in Monterey, just checked and you are correct, been gone for a while. Thanks!Didn't this option vanish years ago? Instead, when a non-notarized app is run for the first time you get a popup telling you to trash it or visit Sys Prefs. You then need to click a button in Sys Prefs to approve it, or right-click the app and "Open" to approve running it...
you're kidding right? there are millions of apps that we can get directly from developers, from 3rd-party stores...You are only suppose to get your apps from Apple........ You know, to protect you from the big bad world......

1. Open terminal
2. Type (without quotes) "sudo spctl --master-disable" (you can copy from here and paste it in)
3. Hit return, quit terminal
4. Check the "security & privacy" settings again.
Did that do it for you?
