I have a jailbroken and unlocked iphone 3G running on 3.0 (haven't updated to 3.1 yet). Every once in a while, and I'm not sure what triggers it, I lose some of my settings: all the icons that I organize in a particular manner suddenly are placed in their default positions, the screen brightness goes to default (50%?), the wireless is turned on, etc.

Does anyone else have this problem? Any solutions?
 
no one? Am I alone in this universe in experiencing this every now and then?
 
Well, obviously no one has seen this or they think the solution should be obvious. I don't know which. You could do a DFU restore and try again. Maybe something got messed up. I'm just throwing out a "possible" solution, since I haven't had this behavior happen to me.

Yeah I'm going to restore it again, though I'm reluctant because that means I'll have to download all my cydia apps again. Guess I have no choice.
