I started up my computer and it seems the default font has been changed. The font in the menu bar looks very similar but it is all jagged and unclear. I also noticed that the default font in websites is different. I recently updated to 10.5.1, how can this happen?? Can it be fixed? Please help

Use Font Book to resolve duplicate fonts, where applicable. Do you remember installing any additional fonts, or removing/disabling some? if you boot into Safe Mode (hold SHIFT at startup), does it go back to normal?
