Ever since I upgraded to 14.1.1, I have been having serious issues on my 8GB M2 MBP 2022. Specifically, seeing lots of visual artifacts, glitches, memory leak/usage issues in certain games like Roblox. No issues on my older MBA and was not having these problems before ther update.

Is there a way to roll back?
 
You can (I've done it before on my machine), but there are two caveats:
  1. You must use a USB thumb drive - you can not erase and reinstall over the internet as you could with an Intel Mac
  2. Recovery (on the internal SSD) will not be replaced with the version you are installing. In your case, 14.1.1 recovery will remain intact, and there is no way (besides using Apple Configurator 2) to match the OS and recovery versions after downgrading.
You'll need to download a "full installer" of some other OS like Monterey or Ventura, create a USB installer, and reinstall the operating system. This is done through the bootable installer.
