Sort Photos in Favourite Folder

Trying to sort photos in the Favourites folder. They seem to organize by default in date order with the newest photo as the cover photo. Doesn’t seem to work the same way as other folders wher you can sort album photos and pick a cover photo.

Is there a way to sort manually and pick a cover photo In the Favourites folder?
