I have everything set to mirror my iPhone. However when my phone is on vibrate, my watch still dings. Is this the correct behavior? I thought it should duplicate exactly what the iPhone is set to.

Oddly enough sometimes it just vibrates and there is no sound. I can't figure it out. Anyone else experience any of this?

The Watch doesn't mirror the mute/vibrate setting from your phone. If you go into the sound and haptics settings on your watch, you can turn the volume down.
 
Changing the sound settings on the phone do not alter the sound settings on the watch, the sound settings of each are independent of each other.

Also, you would only get notifications on the active device. So if you're wearing your watch, and your phone is not awake, then you would get notifications on your watch; if you are using your phone when a notification comes in, then you will get the notification on your phone.
