I have a new gray Series 3 Edition AW. I'm confused about Sounds and Haptics. Shouldn't I get some kind of sound and/or haptic when I receive new mail or a notification? I have the Alert Volume and Prominent Haptic set at top levels in the Settings. I do get both ringing and a haptic when I receive a phone call.
 
Have you looked at the Notification Settings for your Watch? For built-in apps, you can customize the notifications on your Apple Watch:

Open the Apple Watch app on your iPhone.
  1. Tap the My Watch tab, then tap Notifications.
  2. Tap an app. If you want the app's notification settings to mirror settings on your iPhone, tap Mirror my iPhone. If you want to use different notification settings just for your Apple Watch, tap Custom.
For third-party apps, you can turn off notifications. Scroll down to the Mirror iPhone Alerts From section and turn off the setting next to the app.
