I just installed Spark as my eMail client and then got a warning for Microsoft that "New app(s) have access to your data".

Should I be worried about this as at first glance I like the look of Spark verses default iOS mail.

Maybe something to worry about, depending on desired level for privacy and possible hacking of Spark.

Basically, Microsoft is telling you Spark has potential to get to all your data there, as Spark servers have your passcode now, and they filter the emails through Spark servers.
