Does this mean that you have to buy a specific Apple-verified RAM for upgrading your MacBook/Pro?

No. You just need memory of the right type/speed/etc. Apple doesn't even make the ram shipped in their computers. It's just normal third-party memory with an Apple logo in one corner of the sticker.
