Is there any software available that will speak a sentance you type into it...?

If you're talking about just reading the text that one types in, it comes with Mac OS X (and previous versions of the OS as well). Go to System Preferences and look at the "Speech" control.

If you mean dictation software that will type as you speak, there are a couple. MacSpeech being the most-Mac native.

As the previous poster alluded to, Textedit does this. It does not do this as you type, but choose Edit>Speech>Start Speaking. You can change the voice in System Preferences

Or, you could select a block of text in almost any app, and select
[app menu]>Services>Speech>Start Speaking Text. :)
