I'm not looking to remove the CD drive and add an additional HD, I'm wondering if I can remove mine and put in a new SSD and then just pop the mountain lion/mavericks disk and have it work.

Also, Will this improve performance noticeably?
 
Look here for the actual model you have, iMac Intel 20" EMC 2266 or iMac Intel 24" EMC 2267, and see the guides about replacing the HDD with an SSD. You may need a 3.5" to 2.5" adapter.

I upgraded my 2007 20" iMac with an SSD and the responsiveness jumped quite a bit.
