I’m new to sprint and my phone went from LTE to 1x today. What the heck is 1x service?

1xRTT. That's CDMA and is what Sprint uses for voice calls. If you've dropped to 1x for data then you are in a spot that has serious coverage/tower issues.

Note, that because Sprint is CDMA, anytime you make a call your phone will drop to 1xRTT. Sprint is in the process of rolling out VoLTE, but until that happens in your area you cannot do voice and data at the same time.
