For a Generation 1 device I am less willing to purchase the Apple Watch, and am watching with passive amusement the breaking news that sandpaper scratches glass.

Dumb question. Could I not pay $50 for the AppleCare for the sport, and worst case if it was damaged twice with deductibles the repairs would still run less than if I purchased the SS?

It's an interesting question. Obviously you're getting more than a sturdier body and screen with the stainless version, since there's also the appearance (and weight) to consider.

It's also possible that you might get scratches the screen that might be annoying but not really enough to warrant a replacement. Does Applecare+ allow you to get a replacement whenever you feel you want one, or are there some conditions you have to meet?

If you read the fine print. Scratches are considered to be "normal wear" and are NOT covered with Applecare+.
