Looking to get the most bang for my buck and currently leaning toward the base model 2.0GHz MBP with an OCZ Vertex 3 + HDD in optibay. Would performance be hampered with having the home folder on the stock 5400RPM HDD in the same way as if that were the only drive in the system? I would think that less I/O on that drive would mitigate its pokiness quite a bit, but am looking for folks who know.

Depends. Opening of applications should generally be just as fast as normal but loading pictures in iPhoto etc would be a little slower... Just make a symbolic link and move only your music, photos and videos if you want. I don't know what the command is in Mac OSX it's ln -s in centos but it is very easy to do it is currently what I am doing with my steam game library
