I'm wondering what the best way to do this is. I plan on getting a new MBP with an OCZ vertex 3 120gb and an HDD caddy to put my HDD in and remove the optical drive. I want to install bootcamp and I'm wondering what the best way is. Would it be okay to install bootcamp before placing the hdd in the optical bay? Would the mac know how to boot into bootcamp if I moved it to the opitcal bay and put in an ssd?

Yes, the Mac bootloader should see previously created bootcamp installation after you move it to the optibay. If you do the conversion first, there are ways to boot the Windows installer from a USB drive (rEFIt).
