I'm considering putting a Crucial m4 128GB SSD in my 17" 2010 MBP, and moving my 750GB Seagate Momentus XT hybrid drive into the place of the optical drive.

I'm gonna install OS X and all my apps onto the SSD and leave the hybrid drive for all my data.

Since 99% of the time we work with our data, will I see much of a performance boost other than apps opening quicker and the MBP booting quicker?

Yes--coming from a hybrid is not as signifcant as coming from a 5400 RPM HDD, but you will see a significanty better read/write time.

Check out the SSD speedtest videos on youtube, it's crazy how much quicker you open apps and stuff.

Instead of say 6 bounces, a lot of the time it's more like one and it's open with an SSD.
