I have a MacBook M1 that I did occasionally use to download photo from my camera SD
I'm going to sell it and just checked SSD usage after 2 years ( I bought it about when it came out )
Just checked SSD wear and it is 1%

Just got an M2 and I did change my camera, now each RAW it is around 50mb ( instead 24mb ) and I often shot 300/500 photo
I was wondering if I should get an external SSD to use it as a temporary folder where I should download my photo before choosing what to keep and what to throw away

yes
an external ssd drive is a great way to keep photos.
since I have 3 MacBooks and 7 external drives an thumb drives that back up and store data.
just now I just placed 40GB of photos and videos on a USB-lightning drive from my iPad iCloud storage.

I wouldn’t, too much hassle. If you’re really that concerned about the longevity of your internal SSD, get AC+, and of course keep backups aplenty.

As far as I know once the SSD fails in new MacBook is not replaceable or probably it would cost such an high price that would not be convenient to replace it
 
I wouldn't worry about this. Use it for a year then check it. If it's 5% of the way through the SSD lifespan then your SSD will still last another 19 years.

Something else will inevitably break before the SSD does i.e. battery, capacitors, backlight.
