I jailbroke last night and am running 2.1 firmware.

Apparently you can, although I have not used theese methods myself

You can create an ad-hoc network between your computer and your phone and SSH without the need for an external WiFi source.

Go to your Airport status in your taskbar and create a network. Once done connect to that network with your phone....that's it.
