Just remove the SIM and do a restore, right? Should I also do a clear/reset all data before? Seems like overkill.

A restore is all that is needed. Remove your sim card and you are good to go!

Thanks! Do I set it up as a new iPhone, or just unplug it when it asks whether I want to restore from a backup or set it up as a new one?

I just remove sim,

Settings-General-Reset-Erase all content and settings
^^ This.

1) Remove SIM
2) Erase All Content and Settings

Do not connect to iTunes, and remove the SIM before you reset the phone unless you want the new owner to drop in on your future iMessage conversations.
 
Seems like there are two camps, the restore camp, and the erase all content and settings camp. :eek:
 
Disable iMessage first to make sure your device is no longer associated with your Apple ID. In fact, I'd remove your Apple ID from all the services that required a login.

(Did we ever resolve all those issues with users selling their devices and iMessages still going to the old device?)

Then Erase All Content and Settings.

Make sure to disable iMessages. Otherwise the person you sell your phone to will keep receiving your iMessages, even with a system reset/restore.
 
I'd be happy to just erase all content and settings, a restore will re-install iOS which isn't what you need to do.
