Stereo Recording

I am wondering what the best way is to record an acoustic guitar. One way is to record the guitar twice ... using mono on two different tracks. The other is to record stereo once, on one track with two mics. Is there a difference in regards to memory space or CPU usage? What would be the most economical in terms of CPU usage? (so it doesn't eventually lock up)
