I am finding that if I add a directory in a removable drive to my favourites, and eject the drive, the favourite is removed and not restored when I plug the drive back in.

Is there any way to prevent the favourite from being removed, making it sticky so to speak?
 
You could make an alias to the folder, and then drag that alias to the sidebar. As long as that alias resides on your internal drive, it will remain in the sidebar even though the folder it points to is not available. It simply won't function if the external drive isn't connected.
