I ordered the white iPhone 4S at around 3:30 A.M. of the 7th. However, my order is still "processing" and I haven't received any email yet from Sprint. Is this normal, or even ok? I'm beginning to get a little worried...

Same thing happened to me. I wanted to make sure that the credit on my account was actually an iPhone purchase, so I called Sprint at (800) 639-6114 and spoke with a rep. They gave me my order number and sent the email out immediately. It will be around a 10 minute wait to talk to a rep due to heavy call volume.
 
Oh ok, glad to know it's not just me. I called as well and got an order number but no offer to have an email sent. But the rep confirmed an iPhone 4S 16 GB in White was ordered, so I am assuming all is well and the Sprint email confirmations system is just overloaded.
