I've been trying to jb my ip5 on 7.0.4 and I figured out why I was having issues, my MacBook Pro is 10.6.8 and it needs > 10.7.
So I sourced a friends laptop who is lion and I was planning on doing this at lunch today or later.
Can I still jailbreak as long as I stay on 7.0.4 or does it need to be signed by Apple who will likely if not already stop signing it? (I saw 7.0.5 was being rolled out so it has me wondering)
Thanks for any advice.

It will always be possible to jailbreak 7.0.4 - even months/years from now.
But once Apple stops sighting 7.0.4, you will not be able to re-install the firmware on an iPhone.
