Stop iTunes from copying apps from iPhone when syncing photos

How can I tell iTunes that it it should not copy apps from my iPhone to iTunes if I only want to sync photos?

I have switched of app sync and deleted the apps on iTunes. With the next sync iTunes copies all apps again from iPhone to iTunes. I don't need them there since I backup with iCloud.

But how can I sync other medias like photos and movies automatically than?
As soon as I set them to sync the device is in automatic mode again.

I copy my photos and movies off the phone manually (File Explorer in Windows). Is PhotoStream an option for you?

No. I want it the easy, automatic way, the way Apple wants it, except the apps.
