Can someone recommend to me some good software for doing stop motion animation? I'm hoping to find something that uses a digital camera to take the pictures (not a webcam).

I don't really know anything about this category of video software (but I do note that it is made by the same company that makes my favorite slideshow software by far so I can vouch for the quality of their products), but Boinx Software has a package called iStopMotion 2 that looks pretty interesting! Check it out and see if it might meet your needs/desires.:)
 
I think you can do that with any prosumer/professional video editing program like for instance, Final Cut Express/Studio.
