stop Preview/OS X putting title and author in PDFs

I make tons of PDFs, and every time Author and Title are auto-filled into those fields in the save as pdf dialog. Many of my programs put nonsense for the title, and I don't really want my name in these pdfs either. So 99% of the time, I have to go and delete. Very annoying.

Isn't there any way to stop this?
