Stop Snow Leopard Text Substitutions?

This is really annoying me now with text substitustions. Mainly because the only parts where I need them are in word processors, and NOT forums, msn or anywhere else simply because it screws up with the display

For instance, I would say “I wouldn’t” and a windows user will see ?I would?t?

How do I get rid of this?
