OK so haven't done too much research on this but:
It seems you can avoid a backup in itunes by changing the selected radio button on the iphone application tab from "all applications" to "selected applications" (or vice versa) so that the bottom right word changes from "sync" to "apply". Then when you click "apply" it will just do a sync without a back up.
Tried it three times, as long as you click apply not sync then it seems to work whether you are adding apps or music.
Needs a few folk to try it out to confirm.
 
can't you just click on the "X" on the toolbar when it is doing the back-up to stop it? it's not that hard and it is pretty instant.

I guess you can,...however this workaround produces a normal sync without the need to cancel anything.
