I have recently binned my old epson printer and I deleted the software BUT Apple updates keep appearing and I have no idea how to stop them. This is not life threatening I know but it is a nuisance. Any ideas?

Maybe try to remove the driver from epson.
The default directory for the OS X printer drivers is "Macintosh HD/Library/Printers". "Macintosh HD" may be different depending on if you renamed your HDD. And the user-installed drivers should be located in "Home/Library/Printers" with "Home" as the short name of your Mac.

So I think you can just delete the user-installed driver from that location ("Home/Library/Printers").

If this fails, you can reset printing system.
