Strange behavior and migrating from old to new

I have an original iPad and am moving to a 'New' iPad and have a couple of questions:

1) Every now and them the iPad 1 will drop out of the current app and go back to the Home screen. If I relaunch the app I'm back where I was. Happens in different apps. iPad has latest 5.1 iOS - this seemed to start when I upgraded to 5. Never done a full reset. Want to pass this one on so any suggestions to prevent this?

2) Did a new activation on the 'New' iPad as I did not want to migrate the problem from above. Is there a way to migrate over just my eMail settings and eMail History?
