Okay, so first, I guess I'm not exactly using Boot Camp as specified.
I've installed Ubuntu using Boot Camp. It was so easy that I'm half way surprised that it's not an advertised option. Anyway, when I hold down option on start up, instead of getting two icons (Macintosh HD and Windows), I get three. The third is labeled "EFI Boot."
Now, why on earth is my EFI partition showing up as a bootable drive? Has anyone run into this? It's totally an aesthetic concern, but if you know of any way to remove that icon without actually deleting the partition, I'd be thrilled to hear about it.
