Oh sorry, I thought it was the yellow icon in your pic. Didn't see that you had also outlined one in red.

Based on this thread, I went to play with Sound Recognition and quickly noted your phone warns you that activating this function disables HEY SIRI function.

Looking now, it’s odd that OP has this in his watch control center. It’s not an option on my watch - only my iPhone. I’m using a Series 4 right now though. Maybe it’s exclusive to Series 5 and above...
 
It shows up on my red Series 6, but not my graphite Series 6. Also, I am *loving* the red much more than I expected.

I'm on a Series 3 and it is in my Control Center (but it's greyed out). Also, if you tap on edit, there is a toggle that you can add. The one you can add would be more geared towards a watch that a child is wearing. It's a toggle called "Schooltime". Based on the description, it appears to be like a Do Not Disturb mode, but it also blocks applications.
