Streaming Video Capture

I want to be able to capture my Skype sessions [audio + video] as well as gaming videos.

Can anyone recommend good programs or devices to do this?

Quality is important, but I don't need to be bleeding edge, so a small cost isn't important, but I don't need professional equipment or software either.

QuickTime (which is included with OS X) can do this.
