I use my Macbook Air as a "road machine," that is when I take it on a trip I use it primarily for web browsing, email, and temporary storage of pix with some pix editing. Will it affect the operation to delete a string of the apps I never use, like iTunes, Garage Band, iMovies, Expose, etc.? My motive is to create more space for pix storage/editing and speed it up.
 
You can safely delete the apps you mention, except for expose. This will give you some extra disk space but it won't speed up anything.
